Homeade Egg Drop Soup


Who doesn't LOVE Egg Drop Soup? This is such a easy dish to make and it turned out so delicious!

What you need:

5 cups of Chicken Broth (I use Simple Truth Organic, from Kroger)
1 1/2 tablespoon of Arrow Root
3-4 Eggs  - whisked
3-4 Green Onions - chopped
(about - I just throw some in there) 1 teaspoon of Himalayan Fine Pink Salt 
(about - I just throw some in there) 1 teaspoon of Garlic Powder
 *Optional- frozen bag of organic corn
 I added corn in my second batch of this soup and the hubs and I both LOVED it. :)

**My first batch of this soup I used 4 eggs, my second batch I went with 3 eggs. I preferred using 3, but if you like more egg use 4.

Let's cook:

-Chop green onions and set aside.
-Set aside 1 cup of broth and pour the rest in a large pot, set to medium-high. Bring to boil and stir in  Himalayan salt, chives, corn (if using) and garlic powder. Return to boil.
-Mix arrowroot with the 1 cup of broth and pour into pot, stirring to combine. Lower heat to medium and boil (lightly) for around 2 minutes, soup will slightly thicken.
-Slowly pour your whisked eggs into soup, will cook immediately.

Homemade Taco Sauce


 Have you ever thought about making your own taco sauce instead of buying from the store?  It's super easy. And way...WAY healthier. Have you checked out the ingredients from a store bought bottle? Let me help you with that....
This is the Taco Bell brand. Let's look at Sodium Benzoate as a preservative. Some may not realize this but it has the ability to deprive the cells of oxygen, break down the immune system and cause cancer. It's found its way into thousands of products, even foods that are labeled as all natural. But don't be fooled. While benzoic acid is found naturally in low levels in many fruits, the sodium benzoate listed on a product's label is synthesized in a lab.

So why is it in our food? Simple. It's the cheapest mold inhibitor on the market and extends shelf life. Learn more at Natural News

Want to make your own? This is what you need:
1 can of Organic Tomato Paste
2 teaspoon Arrowroot (I use this instead of corn starch)
1 tablespoon Apple Cider Vinegar
1 teaspoon Garlic Powder
1 teaspoon  Cayenne (add more if you like really spicy sauce)
4 teaspoons Chili Powder
1 teaspoon Himalayan Pink Salt

Here's what you do:
Dissolve arrowroot in 3 cups of water in a medium sauce pan. Add remaining ingredients and bring to a boil. Reduce heat and simmer for 5 mins. Allow to cool before pouring into bowl/bottle.
Can keep for up to a week in the refrigerator, shake well before each use.
I didn't have anything to store my sauce in, so I was using a bowl (this recipe makes a lot). And then my kiddo said "Let's use my lemonade bottle." Hello recycling and reusing. Works perfectly!

Gluten/Dairy Free Mac and Cheese

Our son has been on a gluten/dairy free diet for quite some time. And for quite some time I've been on the hunt for a yummy mac and cheese recipe. In the past we tried some various brands, out of the box. And while it was gluten/dairy free....sadly, it tasted and smelled like tires. No joke.

My husband is currently stationed overseas and I told him that while he was away I WOULD find or make a recipe that was yummy. Our son has Autism, so he's extremely picky when it comes to food, certain textures or smells he just can't do. So receiving two thumbs up was the Ronnie stamp of approval.
That's the face I was hoping to see after he tasted it! 


Ingredients Needed:

Gluten Free Noodles - I used a 12 oz package - will include picture.
1 1/2 Cups of Soy Milk
1 - 8 oz Package of Daiya Mozzarella Style Shreds Cheese - you can use cheddar instead if you want.
3 Tablespoons of Earth Balance Butter
1/4 teaspoon Garlic Power
1/4 teaspoon Ground Mustard
1/4 teaspoon Salt - add more if needed.
His noodles, which by the way I picked up at Walmart, are little ducks. Ducks! How cute is that? And he was SO excited about it too!

Ready to Cook?

Cook pasta as instructed on package. I used the entire 12 oz package.  After noodles are done cooking, drain and set aside. In a medium sauce pan, on low heat, melt your 3 tablespoons of butter. Whisk garlic powder and ground mustard in with butter. Add your package of cheese and milk. Stir occasionally, cook for about 15 mins. Mix cheese sauce and pasta until well combined.

He had TWO helpings and another bowl for an after bath snack. This is :HUGE: for him! :)
